APPLE, BANANA AND PECAN SALAD
 
INGREDIENTS: 3 large unpeeled apples-diced, 3 large bananas-diced, ½ c. raisins, ¼ c. chopped pecans, 1 tsp. sugar, 2 Tbs. mayonnaise
DIRECTIONS: Combine all ingredients; mix well. Yield 6-8 servings
 
 
SWEET POTATO AND APPLE CASSEROLE
 
INGREDIENTS: 6 medium baking apples-peeled and sliced, ½ c. maple syrup, ½ c. brown sugar, ½ c. butter, salt to taste, 4 medium sweet potatoes, 1 c. chopped pecans
DIRECTIONS: Combine apple slices, maple syrup, brown sugar and butter in a medium saucepan. Cook over medium-low heat until apples are tender; add salt to taste. Bake sweet potatoes in their jackets until tender; peel and slice. Layer apples and potatoes in 4 layers in a buttered 2 quart casserole, beginning with potatoes and ending with apples. Top with chopped pecans. Bake for 30 to 45 minutes in a 350 degree oven.
 
 
APPLE PORK CHOPS
 
INGREDIENTS: 2 Tbs. oil, ½ c. chopped onion, 4 (1/2-inch thick) pork chops, ½ tsp. salt, pepper to taste, 2 apples-peeled-cored & sliced, 2 Tbs. brown sugar, ½ tsp. ground mustard, 1/8 tsp. ground cloves, ¾ c. hot water
DIRECTIONS: Preheat oven to 375 degrees. Heat oil in large skillet. Saute onion in oil for 1 minute, or until tender. Remove onion and set aside. Brown pork chops on both sides in oil. Place chops in an 8x12” baking dish and sprinkle them with salt and pepper. Cover the chops with the apples and cooked onion. In a small bowl, combine brown sugar, mustard, cloves and water. Pour over chops. Cover and bake in the preheated oven for 30-45 minutes.
 
 
AUTUMN APPLE CAKE
 
INGREDIENTS: 3 eggs, 1-3/4 c. sugar, 1 c. oil, 2 c. flour, 1 tsp. cinnamon, 1 tsp. baking soda, 1 tsp. salt, 1 tsp. vanilla, 2 c. sliced apples (peeled & cored), 1 c. walnuts or pecans
DIRECTIONS: Beat eggs and sugar together. Add oil a little at a time. Mix dry ingredients together and add to first mixture. Add vanilla; fold in apples and nuts. Pour batter into a greased and floured bundt pan. Bake at 350 degrees for 40-50 minutes. Cool on wire rack for 15 minutes. Transfer cake to plate and sprinkle powdered sugar on top.
 
 
APPLESAUCE BARS
 
INGREDIENTS: ¼ c. butter-softened, 2/3 c. brown sugar, 1 egg, 1 c. applesauce, 1 c. flour, 1 tsp. soda, ½ tsp. salt, 1 tsp. pumpkin pie spice, 1-1/2 c. powdered sugar, 3 Tbs. butter-melted, 1 Tbs. milk, 1 tsp. vanilla
DIRECTIONS: Preheat oven to 350 degrees. Grease a 9x13” baking pan. In a medium bowl, mix together the butter, brown sugar and egg until smooth. Stir in applesauce. Combine the flour, baking soda, salt and pumpkin pie spice; stir into the applesauce mixture until well blended. Spread evenly into the prepared pan. Bake for 25 minutes in the preheated oven, or until edges are golden. Cool in the pan over a wire rack. In a small bowl, mix together the powdered sugar and butter. Stir in vanilla and milk until smooth. Spread over cooled bars before cutting into squares.
 
 
APPLE SHORTBREAD PIE
 
INGREDIENTS: 2 c. flour, ½ c. sugar, ¼ tsp. salt, ¾ c. chilled butter-diced, 2 egg yolks-beaten, 1-1/4 lbs. apples-peeled-cored and cut into ¼” slices, ¼ c. brown sugar, 1 Tbs. flour, ½ tsp. cinnamon, ½ tsp. nutmeg
DIRECTIONS: Preheat oven to 400 degrees. Sift flour, ½ c. sugar and salt in a large bowl. Cut in butter until mixture resembles coarse crumbs. Fold in egg yolks. Remove ¼ of mixture, and set aside. Press remainder onto bottom and sides of 8” tart shell or pie pan. In a large bowl, combine apples, brown sugar, 1 Tbs. flour, cinnamon and nutmeg. Place apples into crust and sprinkle reserved crumb mixture evenly over the top. Place pie on a baking sheet and bake in preheated oven for 15 minutes. Reduce heat to 350 degrees and continue baking 20 minutes. Reduce heat to 350 degrees and continue baking 20 minutes, or until top is golden brown and filling is bubbling.
